REALLY good cheeseburgers on the grill. My husband makes the best burgers.

Grilled pork chops from the farm near us. The pork is the best I've tasted in a long time. Egg noodles on the side and a salad. Nothing remarkable, but quite tasty.

The butternut squash/sausage casserole. I think we might not get much more squash. The season ended a while ago.

We went out with friends tonight. I ate too much. It was good. I had salmon with zucchini on the side.

That does sound good. I did a pork chop with Asian seasonings. Along with polenta and sauteed veggies.

Chicken tortilla soup in the Crock Pot. It was really good. My dad knows a guy who makes the salsa that I use for it. I have a case of it, so I am trying to be creative. (Otherwise, I'd probably just eat it with a spoon since I like it so much.)

Soups and stews are always better the next day. Same with curries. Jack in the Box for me. Went to a volunteer orientation at Dallas Animal Services.

Eggplant parmigiana and I made the sauce myself. I'm kind of proud. Let's hope it tastes as good as it smells.

Turned out well. It was so simple. Garlic, crushed tomatoes, dried oregano, and fresh basil (chopped) cooked in some olive oil. I salted the eggplant and let it drain for a few hours. Then, I layered the sauce, eggplant, cheese, a few times, and cooked in the oven until it smelled really good. Who knew... It was good.

Frittata. I think I cooked it a couple minutes too long. Unfortunate. It tasted good, but could have been more tender.

That can be easy to do. Even slightly overcooked they are tasty.
