That sounds good! We had burgers cooked on the grill. Excellent way to celebrate the end of the rain for a while.

Tonight it was take away from Lakewood Smokehouse. It was their smoked turkey club. More than enough for two people. Alas, the coleslaw sucked. Tomorrow it's back to the Lair.

Coleslaw is always hit or miss. There's no just ok slaw.

Tonight was garden eggplant, tomato, and pasta. I fry some onions, eggplants, frying peppers, and garlic until the eggplant starts to caramelize. Then, I put in some cut up garden tomatoes and good red wine. Cook down until the tomatoes are mostly sauce. Add a bit of pasta, and eat. Season however you like. I prefer salt, pepper, and basil.

Steamed Carolina shrimp. One of my favorite things out of the sea. I ate enough for 2 people, but it's good for you, right?

We had our annual corn boil dinner yesterday with brats, hot dogs, potato salad, beans, and an assortment of bad-for-me but taste-oh-so-good desserts. LOVED the brownies!
Tonight I have to be good to make up for all those carbs I ate yesterday. And of course, zucchini pudding.

Corn... One of my favorite things. Tonight was grilled chicken with asparagus on the side. Trying to eat healthy before 3 days of eating out. Ugh.

Scallops, couscous, and garden green beans. Nice crisp white to make the best at the end of a hot day. Good times!

Last gumbo of the summer, I'm afraid. Fresh tomatoes, fresh okra, fresh shrimp. It was so good! Gumbo is always good, but fresh is always better. I need to get more veggie stand okra to freeze for winter gumbo.

Very tasty grilled cheeseburgers (with a hamburger just for Bingo's dinner), and then baked peaches with vanilla ice cream for dessert. What a treat!

Fresh Market has things called Little Big Meals (dinner and dessert for 4 people for $20). This week, it's chicken roll-ups (with spinach and feta in chicken breast), veggies to roast, and pasta salad. Dessert is chocolate chip cookies. It was quite tasty, and will make at least 2 meals for each of us.

Baked spaghetti with eggplant in the sauce. It was kind of like eggplant parmesan. Quite tasty and really easy.

I had a tomato/sweet potato soup in the hospital that was really good. A touch of salt/pepper/parsley in it too. Gotta find a recipe for that.

If it tastes anything like what I had in the hospital it is definitely worth trying. Not sure about the red pepper hot stuff though.
