That's how I should have done mine. Except I'm leery of using sauerkraut in cast iron.

Oh! I forgot about roast beef hash. I love that.

Tuna casserole leftovers. Better leftover than the first night.

Did lamb shanks in the clay cooker. Leftovers for later. I had a South African white for the pot and and 14 hands Hot to trot blend for the cook.

Went out for Mexican food and over ate. I had Camarones Diablos (spicy shrimp). It was really good, and a reasonable portion, but I ate too many fried tortilla chips. Everything was delicious. Now, I need a nap.

Post dinner naps are good. Helps you digest so you can have dessert.

Ham with sweet potatoes and asparagus. Very spring-y. The giant basket of last fall's sweet potatoes are almost gone.

It's grilling weather! We had enormous pork chops and potatoes baked on the grill. I decided to steam the green beans inside. We have leftovers since the chops were so big. I don't think I've ever seen anything like it.

Comfort food - grilled cheese and tomato soup. I put some spinach in my sandwich to convince myself that I ate something healthy.

I'd laugh but I use a tomato.

Crab stuffed flounder with rice and zucchini on the side. Crisp white. Should start cooking soon.

Got a butternut squash in the oven. Need to check the spinach to see if it's still good. Grilled steak, stuff with blue cheese and a cranberry ginger sauce. Nice red to go with.

Salmon with a pineapple glaze. It sounds weird, but it was really good. It was a sweet/spicy thing that worked perfectly on the fish. Yum!

I've done a pineapple pico. Sounds strange but really good.

Cauliflower fried rice with shrimp. Pretty good too. No idea for tonight, maybe soup. Something else if I have any energy left to cook.

Improvised veggie and crab meat pasta. Added a little sherry and butter to make a sauce that went really well with the crab. Yup. Hope I can remember what I did.

That sounds good. Having a salad made with all sorts of goodies from the salad bar. Red leaf lettuce is the base from one of the farmers market.

Re: For Dinner Tonight?
Curried chicken salad on baby spinach and arugula. I wish I had grown the spinach, but my spring greens are stunted from the cold in April. The arugula came back from fall (surprising!), so at least that was from the garden.
