Chicken sausage with apples, spinach, and mixed rice. It sounds funky, but it tasted really good.

Turkey and cheese sandwiches tonight. It was supposed to be tropical seafood with pineapple and mango on the grill, but we got home too late from work. Tomorrow will be tropical weather, so it will be a good day for that plan.

Mushroom risotto. Leeks, mushrooms, and a little garlic, thyme, S&P. Splash of white wine. Add to risotto made the classic way with hot stock and finished with a little butter. It was delicious and surprisingly filling.

Went to a dinner party last night. Had wonderful fried Rappahannock oysters as an appetizer (and I ate enough of them to make a whole dinner). Entree was a nice chicken, fresh tomato, and pesto dish. Not sure what it was called, but it was really tasty. No pasta with it either. It was fine on its own. Perfectly cooked green beans complemented. A not-buttery Chardonnay on the side.
I did a bad thing and skipped a beautiful dessert because I had made such a pig of myself on the oysters.

It does sound wonderful and so does the wine. Grilled cheese and some species of red.

Thunderstorm burgers. My husband grilled in the downpours. We just put the grill under the storage barn roof and grill away. Thank goodness it has a gravel floor and open sides. The burgers were delicious.

Squash patties. They are shredded summer squash (any kind) made like crab cakes. They tasted really good and weren't too filling. First corn on the cob of the season. Delicious.

Grilled salmon with some rice and summer veg. The fish tasted great. Not too smokey from the grill. Just rite. The kitties enjoyed eating a little too.

Baked some cod with a peanut coconut sauce, udon noodles and sauteed spinach and bok choy.

Brian took me to Red Lobster yesterday for surf n turf. Mmmmmmm so good but so expensive! $100 for two people and we didn't get expsnsive drinks or dessert. YIKES!
I finally got to meet his mom over the weekend since she was in town for a funeral. She was nice. I think she liked me, she told Brian I was very smart and talkative.....like that's news to me.

We had squash "burgers." I shredded a couple patty pan squash, added an egg, breadcrumbs, and some shredded cheese. Mix, make patties, pan fry. It is so good and light for summer.

I plan to try this with lots of summer veg I like it so much. I figure eggplant would work well, although it might need some flavor enhancers. Maybe Mediterranean flavors with some feta. Hmm... Going to farm store today.

Big salad since I have a lot of that stuff in the fridge. Got it all on clearance! Too hot to cook anyway.

Risotto with mushrooms and Asiago cheese. It seemed like a stretch to make it on a hot day, but it was good - and there are leftovers so I don't have to cook for lunch tomorrow.
