Roasted chicken. The farm that we get our milk from also raises chickens and pigs. The meat is a little more expensive than the store, but it tastes SO much better. The chickens run around cleaning up the pastures, so they taste like they have moved in their lifetimes. There's hardly any fat too. They are the best chickens I've ever tasted.

Sounds like they have a good life too....until the end. I read that meat from chicks like that are healthier for us too, more protein and less fatty.
Beware of chicks in the store that have white streaks running through along the grain of the meat....they have up to 22% less protein but more than 35% more fat in them.

Eggs and toast. I had to commute to the office today (changed job projects, so I'm doing some training). Quick/easy dinner was necessary. I have some lovely home made whole wheat sesame seed bread to use for the toast. A guy here in town bakes it, and he does much better than I ever could. I make good bread, but not like this.

Veggie lasagna. I made the sauce, and did an eggplant/mushroom/zucchini stuffing to replace the meat. It turned out well. Next time, I think I'll make a little more ricotta.

Fried rice made out of leftovers. I had some ham lunch meat, some asparagus, and some mushrooms. I used olive oil instead of sesame oil, so it wasn't what people usually expect from fried rice. But, it's a great way to use up leftover bits and pieces. Very filling.

Sounds good. Can you make it with cauliflower instead of rice? My system can't handle rice.
I am having salmon for dinner. Probably fruit salad to go with it since I currently have oranges, grapefruit, apples, and grapes to use up.

That sounds good. Salad here, there was home grown lettuce on the salad bar so I helped myself to that.

Had salmon and a big fresh pear. I was craving a fresh pear so badly I even paid full price ($1.59 per pound) for it!

Hmm... I wonder if there are low-carb pasta recipes out there. Make-it-yourself ravioli isn't TOO hard. Would wanton wrappers be carb overload? They're kind of big, so two or three ravioli would make a decent meal (with veg included in the sauce to bulk it up).
Today was leftover Chinese food. Not as good as the first day, but convenient for the end of a busy day.

Crabcakes because it's crab season. YUM! I've missed crab meat. Jumbo lump is $26/pound, but it's so good. I need to call my waterman friend to steam some in our driveway. I love crab pickin' once a year. After that, I go the lazy way and let someone else do the hard work.

Today was cheap dinner - beans and rice. Good, filling, super cheap. I just couldn't figure out anything, and that was quick. I hope inspiration returns soon. The CSA starts on Friday.

It kinda was, first pears, then an orange, and a little later grapefruit. Bij was a little put off by the grapefruit scent.
