I'm not sure what to do today. I got too hot, and it kind of ruined my appetite. At least we had a nice brunch (I had chicken and waffles) with friends.

Tonight was scrambled eggs, tomatoes sliced on the side. Tomorrow, I plan to cook some of the tomatoes for spaghetti sauce. We're overloaded. I love having that problem.

For the past week it's been "what will I cook to go with my zucchini tonight?" Four big ones in the fridge and at least five more nearly ready in the garden. Mom has got to learn to like zucchini......I can't keep up with it anymore. I'm eating so much of it my blood test last week for the rheumatologist showed blood potassium levels about 5-6 points higher than an identical test done only 2 months ago.

Zucchini bread might be a way to sneak some into your mom. It isn't the healthiest thing, but it is delicious. I've put pesto on lightly cooked zoodles, and it's delicious. You can pickle it too. If you're into canning, the pickles will last for months.
Tonight we had lump crab meat (which was a fantastic price) on pasta. I made a really light sauce out of some of the tomatoes. It was fantastic. There are leftovers for tomorrow.

Scallops with garden grown potatoes and squash on the side. Nice and refreshing after a hard day of fencing.

Homemade eggplant parmesan. I wasn't sure I knew what I was doing, but it turned out just fine. I am impressed with the garden tomato sauce. I didn't even skin the tomatoes. I cooked them and whirred them up in the blender. Worked out great.

Mom's tomato plants are going nuts right now too....along with my zucchini. Still eating it every night....with tomatoes on the side.

Broiled salmon, green beans, and pesto pasta. Made the pesto with some of the forrest of basil in the garden.

Well you're a head of me if even it I did use shrimp. Angel hair pasta nest with sauteed shrimps and veggies. Fresh basil. White wine was the tipple.

Shrimp in garlic sauce. I had wine for the recipe, but I didn't like it so much in the glass. There was nothing wrong with it. Just had a flavor I didn't like so much. Tasted fine in the sauce though. Weird.

Today was simple. Cheesy potato casserole and salad on the side. Finally getting to the bottom of the garden potatoes. I will miss them when they're gone.
