Burger in a bowl along with zucchini pudding and tomatoes.

How do you make zucchini pudding you ask? Peel, cook, puree, and use it to replace about half the milk needed for instant pudding mix. You'll never know the zucchini is in there by the taste but it's healthier for you! My mom even likes it.

Believe it or not, there's recipes online for zucchini ice cream...

Tortilla soup made with one of the butternut squash I got off my volunteer plant. I used it instead of chicken. Turned out great. I bet you could do it with zucchini too, Fiff.

I'll have to try that, my zucchini plants are having what looks like a second act. The big leaves were dying off and I thought they were done for the season but now I'm getting new leaves from the roots and 3 new flowers already on them. I didn't know zucchini can do that....those plants looked nearly dead before the new growth showed up.

If I'm lucky and keep them tented against frost I may get a second crop from them in late October.

Tonight is Bij's favorite: salmon.

We went out for Mexican food tonight. It's been ages since we ate out. I've been eating veggie during the weeks, and feel so much better for it. I had a spinach enchilada tonight, and it was really good. Not overloaded with cheese. I used some of the salsa for the chips on it, and that was a great addition. Smile

Scrambled eggs and toast. I tried cooking the eggs on low heat, and they turned out so creamy. Delish!

Hamburgers on the grill with amazing onion rolls from The Fresh Market. Last of the season tomatoes on top. Good way to kiss summer goodbye.

I met a friend for happy hour. We shared an excellent flatbread that had feta, roasted red peppers, and arugula on it. Paired very well with Pinot Noir.

A very nice vegetable and rice soup. I put sweet potatoes in it, which was a nice change from the usual stuff.

Sounds yummy!

Leftovers, not sure which though. I have pork roast, beef roast, and chicken in the fridge. All cooked and needing to be used up. Ideas?

I had my b-day dinner at Merroir in little Topping, VA. Angels on horseback (grilled oysters with country ham), seared scallops with mushrooms, and a nice pound cake with strawberries for desert. It was delicious!

That really sounds good!

Taco salad so when I'm sitting at the Medicaid office for hours they'll regret asking for so much paperwork about my inheritance and income....and wasting so much of my time putting it all together and then sitting on those rock hard chairs, killing my back, waiting to talk to someone before they cut me off. devilish

My friend's sister threw her a 60th birthday party at a lovely Italian restaurant in Richmond. I can't believe I didn't eat pasta, but salmon and broccolini, which was fantastic. We had red wine with everything and chocolate cake. It was a lovely party with great company.
